Each variety of artichoke has a specific cut and way of cooking them. In Italy for example there are the Romaneschi, typical of Roman cuisine, large and round, you discard less leaves (fried they are delicious!) or those from Sardinia which are smaller, spiny and can be eaten raw as well. If you search on the types of artichokes in Italy you will discover a very interesting world!
